Imagine a coffee filled with the elegant, sweet fragrance of peach, like a wedding bouquet. SOWN is proud to present our special coffee, WEDDING PEACH GEISHA HONEY CO-FERMENTED.

 

Whenever I roast Geisha, I feel both excitement and nervousness at the same time. Fully expressing the delicate and elegant flavors unique to Geisha is the most beautiful challenge given to a roaster.

 

WEDDING PEACH, in particular, is a harmonious coffee like a perfect wedding ceremony, combining Geisha's elegance with the sweetness of peach.

 

WEDDING PEACH is a special Geisha born at Los Patios farm in La Plata, Huila region of Colombia. Geisha is a premium variety that deserves to be called the royalty of coffee, boasting delicate and complex flavors.

 

 

The greatest feature of this coffee is the innovative Honey Co-fermentation process developed by Los Patios' R&D team. After undergoing 12 hours of aerobic fermentation in cherry form at various small farms located at altitudes of 1,600-1,900 meters, the coffee is transported to the Los Patios processing center in parchment form with the pulp removed.

 

This is where the truly special process begins. The R&D team adds commercial peach concentrate and their own proprietary solution to the de-pulped coffee. While additional fermentation occurs at this stage, what's more important is the transfer process of precursors contained in the peach concentrate and proprietary solution into the green coffee beans. This fermentation and absorption phase lasts for 2 days, after which the coffee is drained and dried for 12-16 days.

Los Patios' honey process is on a completely different level from typical honey processes. The sweet notes of peach meet Geisha's delicate floral aromas, creating an entirely new dimension of flavor.

 

SOWN frequently introduces coffees that have undergone such sophisticated Co-fermentation processes, and roasting these coffees is indeed a very delicate task. Even more so when it's Geisha. Geisha already has high bean density and a dense structure, and when peach concentrate and honey process mucilage are added, the heat transfer pattern becomes even more complex.

 

When roasting WEDDING PEACH, I paid special attention to heat management in the early stages. I needed to preserve both the delicate sweetness of peach and Geisha's distinctive floral notes—if the temperature rises too quickly, the sweet peach aroma dissipates, and if too slow, the honey process's characteristic heavy body can express negatively. I found a balance that sufficiently caramelizes the peach sweetness while fully preserving Geisha's elegant floral notes and bright acidity.

 

WEDDING PEACH truly boasts an elegant and romantic taste like a wedding bouquet, as its name suggests. The most attractive feature of this coffee is that the delicate, smooth sweetness of peach appears in layers, like petals.

 

 

First, the subtle, milky-soft sweetness of White Peach approaches as the first layer. Following that, the rich and abundant sweetness of Gold Peach unfolds as the second layer, and finally, the tart yet honey-concentrated sweetness of Apricot completes the third layer. The way the flavors develop, as if transparent peach-colored petals are stacking one by one, is truly beautiful.

 

To express these layered, delicate taste profiles, we specially designed the packaging. Created with the feeling of transparent peach-colored petals overlapping, it visually captures the multi-dimensional and delicate flavor structure of this coffee.

 

When brewed as filter coffee, Geisha's distinctive delicate floral notes become even more pronounced while the different sweet layers of white peach, gold peach, and apricot unfold sequentially. The experience of flavors developing as if turning transparent petals one by one is truly special. When extracted as espresso, the three types of peach sweetness condense all at once, filling the mouth and offering a rich experience like savoring a premium dessert.

 

The aftertaste is truly impressive. The lingering sensation after swallowing is as elegant and romantic as a bride's bouquet blooming at a wedding venue. Starting with the soft finish of white peach, passing through the abundant sweetness of gold peach, the tart acidity of apricot lasts until the very end. The process of flavors gradually changing and fading, like transparent petals falling one by one, is truly beautiful.

DIPSTYLE BREW GUIDE

 

 

HOT

 

① Open one pack of DipStyle Coffee and place it in a server or mug.

② Slowly pour about 150-200ml of hot water while wetting the tea bag.

③ Once all the water is poured, shake it up and down 3-4 times, then let it steep for 2 minutes.

(You can steep for 3-4 minutes depending on your preference.)

④ Pour the brewed coffee into a cup and enjoy.

⑤ The tea bag can be steeped 2-3 more times, so don't throw it away.

 

ICE

 

① Open one pack of DipStyle Coffee and place it in a server or mug.

② Slowly pour about 100ml of hot water while wetting the coffee.

③ Once all the water is poured, shake it up and down 3-4 times, then let it steep for 4 minutes.

④ Fill a server or cup with ice to chill it, then add the brewed coffee and tea bag.

⑤ Stir well with a straw or spoon to mix with the ice, and enjoy.
