What if there were an aroma that blooms in the quiet stillness of midnight?We are proud to present SOWN’s first blend, MIDNIGHT BLEND.
Although I have long focused on single-origin specialty coffees, I have always believed that blends have their own unique charm. The art of blending lies in bringing together distinct personalities to form a perfect harmony. That, to me, is the true artistry of coffee.
Midnight Blend embodies the depth and mystery of the midnight hour. It is a dark-roasted blend crafted from three origins across three continents: Colombia San Agustín, Guatemala Quiché, and Indonesia Mandheling. Each origin’s strengths are amplified through a carefully designed roast profile and blending ratio that achieve a complete balance.
The Colombian San Agustín, processed by the clean washed method, forms the foundation of the blend. With its balanced acidity and structure, it connects the other coffees in perfect harmony. Guatemala Quiché adds the solid texture and chocolate tones typical of Central American coffees, deepening the body and complexity of the cup.
Meanwhile, Indonesia Mandheling, processed by the traditional wet-hulling method, provides the defining character of this blend. Unlike washed or natural coffees, wet-hulled Mandheling offers a distinct herbal and earthy tone. When paired with dark roasting, these qualities transform into an alluring depth reminiscent of the scent of wood in a quiet forest at night.

When crafting a dark roast, the greatest challenge lies in preserving each coffee’s unique qualities while eliminating any unwanted harshness that may arise during roasting. Over-roasting can easily introduce burnt or bitter notes that overshadow the coffee’s natural sweetness.
However, Midnight Blend defies that expectation. Despite its dark roast, it boasts a remarkably smooth and clean finish. To achieve this, I conducted dozens of roast trials for each origin, fine-tuning until the ideal point was found. The roast was completed precisely at the onset of the second crack, allowing full caramelization without excessive carbonization.
The result is a coffee that harmonizes the deep richness of dark chocolate, the sweet and silky texture of caramel, and the toasty nuttiness of walnut. It feels like savoring a fine dark chocolate, a bittersweet indulgence with a calm and steady body that mirrors the serenity of the night.
As espresso, Midnight Blend delivers a dense sweetness of dark chocolate and caramel syrup that fills the palate. When brewed as filter coffee, its smooth texture and nutty finish reveal an elegant balance. It pairs beautifully with milk. In a latte or flat white, the coffee’s character remains vivid while becoming even softer and sweeter.

ESPRESSO BREW GUIDE
To achieve SOWN coffee’s clean and diverse flavors, we recommend using a VST basket. If you can lower the machine’s bar pressure to between 4 and 6, that would be even better. The optimal flow rate with the portafilter removed is 210ml in 30 seconds.

FILTER BREW GUIDE

① Prepare a server warmed with hot water, place the filter in the dripper, and rinse it with hot water.
② Grind 13g of coffee to a slightly fine consistency.
③ Place the ground coffee in the dripper, zero the scale, start the timer, and pour 57g of water over the coffee grounds to wet them evenly.
④ Gently swirl the dripper in a circular motion to mix the water and coffee well.
⑤ At 45 seconds, pour water until it reaches 209g.
⑥ If the grind size is correct, the water should finish dripping through by around 2 minutes and 30 seconds.
⑦ If the water drips slower than 2 minutes and 30 seconds, adjust the grind size to be coarser. If it drips too quickly, grind the coffee finer.
⑧ Once all the water has dripped through, enjoy your coffee.
ICED
① Place the filter in the dripper and rinse it with hot water. Discard the rinse water and put 45g of ice in the server.
② Grind 13g of coffee to a slightly fine consistency.
③ Place the ground coffee in the dripper, zero the scale, start the timer, and pour 39g of water over the coffee grounds to wet them evenly.
④ Gently swirl the dripper in a circular motion to mix the water and coffee well.
⑤ At 45 seconds, pour water until it reaches 147g.
⑥ Once the coffee has finished dripping, remove the dripper and gently shake the server to mix the ice and coffee well.
⑦ Pour the coffee with ice from the server into an ice-filled cup and enjoy your coffee.
